Pork Roast

“I first tasted this at my in-law’s house. For my husband. it brings back memories of eating this meal as a special dish with his family as a child. The fatty pork used in the recipe was not very widely available in India during the 70’s and 80’s so it was a special treat when it was made. During one of my mother-in-law’s visits to our house, she shared the recipe and taught me to make it and since then our family has enjoyed eating this meal, especially our 11 year old daughter who loves it in spite of it being spicy. I am hoping I can also pass this recipe to my daughter as a family tradition.

This is a substantial dish enjoyed with large groups of people and
I make it as a treat for my extended family and friends when they visit us.”

Ingredients

500g pork
5 potatoes
4 tbsp oil
5 tsp cinnamon
10 tsp cloves
10 whole peppers
10 red chilies
salt to taste

Method

  1. Cut the pork in big pieces, ensure that there is fat included in each piece. Also peel the potatoes as a whole.
  2. Heat the pressure cooker and add oil.
  3. Add cinnamon cloves, pepper and red chilies.
  4. Once the ingredients are roasted, add the pork pieces and the potatoes, cook until the pork and the potatoes turn brown.
  5. Once it is brown, add salt to taste and half a glass of water.
  6. Close the pressure cooker and cook the content for 15 minutes.
  7. Open and cook until the gravy thickens.
