Bacon & Egg Pie

Te Huia Clarke

“There are little memories like when I learned how to crack an egg,
how my mum taught me and I would like to pass this on to my own tamariki (children).

Food is about bringing everyone together and this meal is one of our favourites.”

Ingredients

2x pastry sheets
4 rashers of bacon, diced
8 eggs
½ cup grated cheese
melted butter for glazing
tomato sauce
a whole lot of love

Method

  1. Preheat the oven to 180C and grease a medium-sized oven dish.
  2. Lay 1 pastry sheet across the bottom and the sides of the dish.
  3. Crack your eggs into a medium-sized bowl, making sure you don’t get any shell in there.
  4. Add diced bacon and grated cheese to the eggs and whisk until well combined.
  5. Lay another pastry sheet over the top of the pie, making sure it is connected to the other pastry at the sides.
  6. Cook for 20-30 minutes, cool slightly then enjoy with tomato sauce on the side.

Try a great side to
accompany your main
